Tortilla de Papas

Here's the recipe I promised to observe and write down last week when my husband made it. It was not easy to pull this out of him! Here are his instructions (you can ignore #3, but I enjoyed leaving it in!):

1. Boil about 6-8 large potatoes, peeled and chopped into bit-sized pieces, about 10 minutes, or until just under-done. You do NOT want your potatoes to be mashed!

2. Drain potatoes and put in large, deep skillet.

3. Meanwhile, tell your wife that you love her.

4. Stir about 10 eggs in a large bowl. Add about a cup of Parmesan cheese, 2-3 tsp Italian seasoning, and about 2 tsp seasoned salt. Generously sprinkle with pepper. You can also add chopped onion and garlic.


5. Pour egg mixture over potatoes in pan, cover and cook SLOWLY on medium heat. You don’t want the bottom to cook too fast. If you’re brave, loosen the sides a bit, take another larger pan, put the pans together, and flip the tortilla de papas to cook the other side.


Very filling, and very yummy!

What I’ve noticed: the more eggs you add, the more moist it will be, and the better it will stick together. Remember, this is not a scientific recipe. It turns out a little different every time we make it because we’ve never had a recipe. Maybe having written this down will help for next time!
